Why Grind Flax Seeds Fresh?

Whole flax seeds are shelf-stable compared with flax meal, but they are less useful in many recipes unless they are ground. Ground flax mixes into oatmeal, yogurt, smoothies, dressings, and baking more easily.
What grinding changes
Grinding breaks the seed coat and turns flax into an ingredient you can actually use in food. It also increases surface area, so storage matters more after grinding.
Practical rule:
- grind small amounts
- use ground flax soon
- refrigerate or freeze extra ground flax in an airtight container
- keep whole seeds sealed, cool, dry, and away from light
